News & Observer food critic Greg Cox says: Many of those cars parked along the streets of downtown Apex after business hours belong to La Rancherita customers. Some come for the extensive list of combination dinners; more adventurous diners prefer the likes of camarones al mojo de ajo, shrimp in garlic sauce; steak or pork carnitas with a fiery salsa verde; chicken with a mole poblano sauce; and jumbo margaritas that are so big they ought to require a lifeguard on duty before anyone's allowed to dive into one.
